Been Awhile...

Sooooo, it's been a little while since I've blogged. Been pretty busy and haven't done a lot of new things as far as diet goes. But here's what I have been up to. The kids and I have started making what we like to think of as "raw" ice cream. Although, I don't really think it's considered completely raw. It's really really really yummy though and there is no white sugar in it!!! The only sugar is from fruit or a little agave :-D I'll post the recipe below.


We have also been juicing quite a bit rather than having a morning shake. I'm really getting into eating more raw foods now that it's beginning to warm up. For breakfast I love to have some fresh fruit and veggie juice. We try to use a variety of fruits and veggies that are lower in sugar and higher in nutrients. Usually our juice consists of apples, carrots, beets, celery, garlic, a Meyer lemon, and A LOT of fresh greens (mustard, brocolli, spinach, collards, etc..) Our farmer's market opened this weekend with some great buys and even the grocery stores are adding more variety now that spring is here. Besides juicing, we have been eating a lot of raw veggie sandwiches too :-)

Let's see, whatelse can I tell you??? I guess you could say that for now our family is not 100% vegan, but we are 100% vegetarian. We eat mostly vegan, but we do have dairy on occasion. Usually on a cheat day we may have some "real" cheese pizza or maybe a molten lava cake from Chilli's (my all time favorite dessert!!!). Part of the reason for our cheat days is that we live in an area where it is difficult to find a lot of vegan alternatives, especially cheese alternatives!! If I want to have a vegan cheese pizza, I have to special order the cheese from the internet or order an entire case of it from our local little health food store, which can get a little pricey for a smaller budget. We are not perfect, but we do our best not to cheat very often.

Well, I guess that about covers it for now. I am planning on starting a weekly video blog for my site. I am still working out the kinks at this time, but hopefully I will have that up and running soon! I hope you all have a wonderful week and enjoy your veggies!!



As mentioned above, here is the recipe for our "raw" ice cream:

1 frozen banana
1/4 cup of soy milk
1-2 tsp. of vanilla
1 tbs of Agave nectar (optional)
* whatever flavoring you would like: 1 to 2 TBS of cocoa for chocolate, a handful of strawberries for strawberry, 1 Tbs of peanut butter for peanut butter, etc...

~ blend everything in your blender to your desired consistency.  Makes one good sized serving :-D
