Very Banana Nut Muffins
Dry Ingredients:
1 1/2 cups of all purpose flour
1/4 cup of raw sugar
2 tsp of baking powder
1/4 tsp of salt
Wet Ingredients:
Egg substitute equal to 1 egg (2 1/2 tbs of milled flax + 3 tbs of water)
1/2 cup of milk
3/4 cup of mashed bananas
1/4 cup of applesauce
Other Ingredients:
1/2 cup chopped nuts of your choosing (we use walnuts)
Grease and flour a 12 muffin, muffin pan. Preheat oven to 400 degrees. In a medium mixing bowl combine dry ingredients. Make a small well in the center of the dry mixture and set aside. In another bowl combine all wet ingredients. Add wet mixture all at once and stir till just moistened. The batter will be lumpy. Fold in nuts. Spoon into muffin cups and bake at 400 degrees for 20 minutes. Serve warm :-D
