Roasting Veggies

One of my favorite things to eat on my healthy diet is roasted veggies. They are so simple to make and they are DELICIOUS!!! We roast everything from potatoes to cauliflower. Here is one of my favorites:

Roasted Mix Veggies
2 Zucchini Squash chopped
1 Head of Cauliflower chopped
1 Onion chopped
3 Cloves of Garlic minced
Olive Oil to coat
Salt and Pepper to taste

Preheat oven to 400 degrees. Coat the bottom of a 9x13 baking pan or a roasting pan with olive oil. Add all ingredients to the pan, then mix around in the olive oil until nicely coated. Bake at 400 degrees until soft and lightly browned ~ about 40 minutes.

We love to serve ours over mashed potatoes!!! Soooooooo Yummy!!!!!
