Food Sciences: Measurement of Coffee Taste Using Lipid Membrane Taste SensorsInstant coffee and the components of coffee were measured by the taste sensing system which used lipid membrane taste sensors. The brands of instant coffee were discriminated easily and the difference of strength of sourness appeared clearly. In the case of measurement of components of coffee, only one-dimensional information was obtained, because all the response patterns are related to pH. Therefore it was difficult to detect a difference of delicate taste other than sourness. Thereupon, the preliminary treatment to coffee was tried to increase the information. The response of ch3 changed by adding milk or skim milk to coffee.

Different output patterns from other channels were obtained. In case of discrimination of brands of instant coffee contribution rate of PC2 improved by 5.8 times and the discriminating resolution was improved. The difference of delicate taste other than sourness was detected as PC2. The preliminary treatment to coffee increases the information and has the effect of improving discriminating resolution.

An improvement of the resolution by the preliminary treatment to coffee will greatly contribute to quality control of coffee and development of new products. Improvements of taste sensors and studies of connection between response of sensor and sensory evaluation are being carried out.

Foods Market Outlook June 18 2011: coffee prices - Coffee prices are trading moderately below last month's 14-yr high. Below are bullish factors and Bearish factors of coffee prices.

Bullish factors include (1) the prediction from Brazil's Ag ministry for Brazil's coffee output to fall 9.5% this year to 43.5 mln bags as trees enter the lower-yielding half of their 2-yr cycle, and (2) ICO's cut in its 2010/11 global coffee output estimate to 133 mln bags from a Mar estimate of 133.7 mln bags and its statement that coffee supplies will be "tight" the rest of the year as stockpiles in producing nations stay near a 40-yr low of 13 mln bags.

Bearish factors include (1) May Brazil coffee exports up +3.7% y/y to 2.62 mln bags, (2) Columbia's prediction for a 2011 coffee harvest of 9.5 mln bags, up +6.7% from last year, and (3) ICO data that shows Mar global coffee exports rose +19.6% y/y to 10.45 mln bags.


Fundamental Outlook-Bull market correction-Coffee prices are correcting lower from their 14-yr high on favorable weather for Brazil's ongoing harvest. Coffee production in 2009/10 fell -4.5% y/y to 122.9 mln bags (ICO), but production should rebound to +8.2% y/y 133 mln bags in 2010/11 Brazil's 2010/11 (Jul-Jun) production will rise 23% y/y to 55.3 mln bags on a favorable 2-yr cycle (USDA).

TRUE reason for high prices of Columbian Coffee, commodity prices june 17 - Of the world's growing appetite for coffee, nowhere has the demand been more voracious than at the upper end. In other words, demand for the higher quality coffee used for espresso and cappuccino has grown at a rate exponentially faster than that of the average drip variety. In most cases, this means Arabica coffee beans. Brazil grows both Arabica and Robusta beans and fills a variety of demand needs. However, high end distributors such as Starbucks tend to seek out specialty varieties of coffee. These are typically high quality beans grown by smaller Central and South American producers. The largest of these producers is Columbia.

Adverse weather conditions caused production to drop drastically in Columbia in 2008 and 2009, hitting a 35 year low of 8.1 million bags at the trough. Many of Columbia's coffee trees were destroyed in 2008 and new trees had to be planted. However, it takes about 3 years for new coffee trees to begin producing beans in an significant amount. 2010 saw a slight rebound in production but still left yields substantially below 20 year averages. Most coffee analyst cite this shortage of high quality specialty beans coupled with swelling global demand as the primary driver of coffee's bull market.

2011 will be the first year that Columbia should begin to see production yields from newly planted coffee trees. As such, production is expected to jump back over 10 million bags of coffee this year. This is still not back to historical averages , but on the road to recovery. While global coffee stocks as a whole will be down in 2011, this influx of higher quality beans could go a long way towards stemming coffee prices this year. @ commodity prices

Brazilian Harvest Brings Fresh Supplies

June finds the 2011 Brazilian Coffee harvest in full swing. Bulls have touted the expected lower yield of this year's crop as a main justification of higher prices. Yet the crop is only expected to be about 8-10 million bags less than last year's record production (see chart below).


Brazil's 2010 Coffee harvest was a new record. 2011's yield is expected to be 8-10 million bags lower - but still high by historical standards.

The market has spent the better part of the year pricing this anticipated lower 2011 yield - a main reason why prices are so high at this time. However, now that harvest is actually taking place, new supply is working it's way onto world markets. Regardless of expected yields, fresh supplies have historically had a dampening effect on coffee prices.

oman coffee prices june 09 2011, oman agriculture - Food prices stabilise at wholesale market: MUSCAT — Prices of some food items were stable in wholesale stores in Muscat Governorate during this week. While prices of other items dropped slightly.

The latest survey conducted by the Public Authority of Consumer Protection showed stability of the prices of rice, flour, tea, sugar, milk, salt, coffee, lentil and Manara cooking oil. The price of Jabal Akhdar cooking oil dropped by 0.32 per cent at some stores.

The survey showed fluctuations in prices of food items at retailers, Tharmad rice, for instance, was sold at RO 21 at some stores, and RO 22 at others. The price of Al Madina rice stabilised at RO 22.5 at most supermarkets. Thahabi flour was sold at RO 2 at some stores, and RO 2.100 at others. The price of a carton of Lipton tea ( 420 kg x 24) hovered between RO 29 and RO 30.

Sugar prices differed from one store to another in the Muscat Governorate, in the range of RO 15.800 to RO 16.400. Milk prices were between RO 28.800 and RO 28.500.

An Overview: The World Coffee Market - As coffee is by far the most popular drink of our time, with no known answer at this time, it goes without saying that the coffee market itself is a very competitive industry. With the large number of coffee brands, companies should look not only good prices but with quality assurance to demonstrate that their coffee is aromatic and flavorful. Research of the International Coffee Organization (ICO) provides that this system, if fully utilized, could raise prices of 2 cents per million 60 kg bags from the market.

Ultimately, only a reduction in production can stimulate a recovery in coffee prices. With prices in mid-2001 below the production cost of most if not all, countries, rationalization of production will be phased in over several years. A severe frost in coffee-producing areas in Brazil is the only scenario of a short-term shock to prices and the possibility of that happening in 2001 moves away quickly.

Starbucks is Raising Packaged Coffee Price by 17 % - If the largest chain of coffee in the world increases its prices, you know you are taking them seriously.

Starbucks is raising the price of packaged coffee sold in U.S. retail stores an average of 17 %, its first increase since 2009, a spokesman said Wednesday.

Starbucks is the latest company to hike prices, forcing the coffee drinkers to pay more for that cup of joe vitale (or two or three) in the morning.

Roast Styles of Coffee

Green coffee beans taste woody, grassy and uninteresting. Although all the natural chemicals are already present in the green coffee, it is the roasting process that caramelizes the sugars, drives out some of the moisture, and converts the flavor chemicals. The flavor chemicals become trapped in the intercellular spaces in the form of an oily substance. They are released when ground and brewed.

The same coffee roasted to a final stage or brought to the same stage in a different time to temperature profile can taste vastly different. For the purpose of describing the roast style, one can go through the roasting spectrum, starting from green beans, and ending in the final stage of charcoal. Stages of roasting are often referred to as roast styles.

Roast style is generally associated with the color of roasted beans. Since this often becomes subjective, and the range of browns overlaps, much work is done to quantify the color shades. The Specialty Coffee Association of America has come up with 8 different shades, numbered from 95 (lightest) to 25 (darkest), in increments of 10. The ground coffee is compared with these 8 color tiles to give it a number. This is referred to as the Agtron number.

When green coffee undergoes roasting, it first gives off trapped moisture. After that the coffee changes color from greenish yellow to cinnamon brown (at about 380OF), which corresponds to Agtron #95, this stage is often referred to as a cinnamon roast. After this, one hears the "first crack" when the steam in the beans creates enough pressure to break the cell walls. This happens between 380 and 400OF. Around 400OF it is moderately light brown (Agtron # 85), and is called light roast. Between 415O and 435OF it becomes medium brown (Agtron #55) and is known as medium roast. At this point the sugars caramelize and the chemical reaction of pyrolisis gives off carbon dioxide. The gases create pressure that break the cell structure with a distinct second crack, which is louder than the first crack. The pyrolitic reaction produces its own heat and as the temperature rises to about 440OF, the beans become medium dark brown (Agtron #45), often called Viennese, or full city roast. As the pyrolisis continues and the temperature is brought up to about 445OF, the color becomes dark brown (Agtron #35) and the surface become shiny with flavoring oils oozing out to the surface. This is often called French, Italian, or Espresso roast. As the temperature is raised to about 470OF the beans are very dark brown, very shiny and called Italian or Dark French roast. As the temperature is raised to 480OF the beans are very dark and shiny with drops of oil on the surface (Agtron #25), also called dark French. After this the coffee is burnt or is now charcoal and of no value.

Most inherent taste characteristics, such as acidity, body, aroma, complexity etc., enhance as roasting proceeds until medium to full city roast (Agtron #50). After that they start to diminish again, except sweetness and pungency which are most pronounced in darker espresso or French roast (Agtron #40)

Taste of Coffee

Though connoisseurs of coffee use language with a vocabulary that would baffle most coffee drinkers, ultimately it is what you like in taste and smell in the coffee experience that is most important. Roasted coffee beans contain about 800 known natural chemicals that are responsible for the taste and flavor of coffee. It is a very complex chemistry and the amounts of these chemicals depend on the type of coffee tree, the soil, the altitude, and the weather. How the cherries are picked, how the cherries are processed, how the beans are roasted, stored, ground, and how the coffee is brewed, is also important, and variations can bring out different flavors and taste in a cup of coffee.

There are experts in the coffee business who are professional tasters. These experts taste samples to decide which green coffees to buy and whether the shipment reflects the sample previously received. They also taste for the purpose of blending coffees so as to bring out certain taste profiles or reduce cost while keeping the quality consistent. These experts use a set terminology to communicate the taste sensations. They follow a standard procedure of sample preparation and tasting. This process is generally referred to as ‘cupping.

There are basically two components of sensory perceptions involved in tasting coffee: Smell, using olfactory receptors and taste using taste-bud receptors. There are four taste senses - namely sweet, sour, salty and bitter - but there are thousands of olfactory sensors, each connected with identifiable aroma. To simplify the communication in expressing the complex experience of coffee tasting, following the basic terminology is useful for anyone interested in coffee.

Coffee Consumtion in USA

In the early records of the North American colonies, there is no mention of coffee. 1668 marks the first reference to coffee. The first license to sell coffee was issued to Dorothy Jones in Boston in 1670. By the turn of the century, coffeehouses made appearances and became centers of social, political and business interactions. The first coffeehouse was established in New York in 1696. Merchant's coffeehouse opened in 1737 in the Wall Street area and was the site of many historic events, such as the reaction to the Stamp Act in 1765 and the mass meeting after the battles at Lexington and Concord. Merchant's coffeehouse was also the birthplace of the first American financial institution, the Bank of New York. In 1790, the first sale of stocks by sworn stockbrokers took place there as well. Now it is the site of the National Coffee Association headquarters.

The Boston Tea Party seems to have helped make coffee a national drink over tea. Drinking coffee became patriotic and the consumption of tea un-American. It was also more convenient to import coffee from French and Dutch colonies in the Caribbean.

The growth of coffee consumption in the USA was fueled by the increased production of coffee in Latin America, improved roasting technology, conglomerations of roasters, mass merchandising and industrialization. The US government has, from time to time, played its role in using the coffee trade for its own political agenda against communism (real or perceived) in Central and South America.

As science and technology advance, consumers become more educated about the impact of the coffee trade on small coffee farmers and laborers. The knowledge of the impact on the environment of technified, sun-grown coffee and the loss of bird habitat has brought about a new consumer consciousness. These consumers are forcing the industry to pay fair price to the growers for economically and ecologically sustainable coffee. The movement for organic, shade grown and fair trade coffees is taking hold, and many of the big corporations are at least making the gesture by providing token amounts of organic shade grown and fair trade coffees. In the meantime increased knowledge of coffees from different regions of the world has given rise to what is known as specialty coffees. So far it is limited to many small roasters, but the larger producers are seeing the market potential and are trying to gain their share of the market.

Consumer and consumer protection agencies have started to pressure the industry and government to start certifying the specialty coffees. There is much misunderstanding about many of the certifications like Fair Trade, Organic Certified and Shade Grown Certified Coffees. Hopefully with more education, consumers will be able to support the causes of their choice.

In the early 1960's the coffee industry lost ground to the soft drink industry. Now with many cold and hot coffee variations available along with a rise in specialty coffee, coffee is once again becoming popular and is regaining lost ground. In the year 2000, specialty coffee's market share was 9% It grew to 14% in 2001. This trend is good for the consumers, the farmers, the environment, and for wildlife.

COFFEE BEAN BLUES: The Plight of Small Coffee Farmers and Farm Laborers

Coffee is produced in tropical climates. Its large-scale commercial cultivation was started in the 17th Century in the colonies of the Dutch, Portuguese, Spanish, French and English. From the beginning the farm labor was exploited. All the colonial powers used slave labor or forced labor. Brazil was the most notorious in exploiting slave labor in the Latin American Countries. Slavery and colonial empires are things of the past but the situation for small farmers and farm labor has not improved significantly.


Today over 50% of coffee is produced by small farmers on less than 5 acres of land. Small farmers generally live off the land and produce coffee as a cash crop. Most of these farmers live in remote areas with very little contact with financial institutions or agricultural marketing education. They pick the coffee cherries and sell to beneficios (coffee mills) nearby. They have no clout with such beneficios because they are very small and the cherries must be sold the same day they are picked or they will spoil. The beneficios often pay farmers less than half the market price. In many cases the farmers have no means to transport the cherries to the beneficio, or they need money up front to buy necessities before the harvest. They then have to sell to intermediaries, known as "coyotes". The coyotes pay them very little for the cherries and give loans, charging exorbitant interest for the money they lend. The farmers get caught in the spiral of debt and eventually lose their land. Most small farmers need all the family members to work on the farm. The children receive no education and there is very little health care, and many preventable diseases are fatal.

Most disadvantaged are the temporary farm laborers who travel many miles to the coffee estates during picking season. Often entire families go to work; sometimes they have lost their small farm. They live in horrible conditions, without any facilities, for the entire picking season.

Coffee is a commodity item, and its price fluctuates depending on many international factors over which small farmers have no control or knowledge. They do not have the experience or resources of large estates to hedge against price fluctuation by contracting futures. For example, the price of green coffee (New York C-market, coffee, cocoa & sugar, is the recognized base price) has recently been fluctuating around 50Ó/pound or less. The average cost of production is about 80Ó/pound. Sometimes farmers have given up picking the crop because they cannot afford to process it. This means they cannot take care of their farms and either lose their land or change to an alternate crop. Unfortunately, some turn to producing drugs.


The low prices of late are partially the result of Vietnam's entry into the coffee market. Five years ago, Vietnam was not exporting any coffee. Now they have become the second largest coffee exporters after Brazil.

This has created a glut in the coffee market and subsequent low prices. In the long run the entire industry will suffer.In the 1950's the US government and the international banking community created a big push for technification to increase coffee production. Technification required farmers to plant high yielding varieties and cut down trees to increase production and ripen cherries faster. These sungrown coffee trees required the use of chemical pesticides, as the birds that ate pests had no habitat left. It also required herbicides to control weeds and fertilizers to input the energy needed for intense production. Technification changed the farmers' generations-old methods of farming, but they had little choice if they wanted US aid money. These farmers have very little knowledge of how to use the chemicals safely. They continue to use deadly chemicals like DDT that is prohibited in most industrialized nations. Because of this unsafe use of chemicals, lack of education and no health care, these people suffer.

Fortunately, more and more consumers are becoming aware of the unfair treatment of coffee farmers and are pressing, with their dollars, for fairer treatment. Some assistance is coming to these small farmers from their governments and international communities that help them organize into cooperatives. Often these cooperatives have their own beneficios and exporting abilities. Many individual farmers and cooperatives are trying to get out of the commodity market by improving the quality of their product and selling to private importers at higher prices. This is a step in the right direction, but it is only a very small percentage of the industry.

Unfortunately, many greedy roasters use these "conscious coffees" as a marketing gimmick to take advantage of consumer sentiments. Hopefully, with the new Organic certification laws and Fair Trade and Shade Grown third-party certifications, consumers will be protected from fraudulent practices.

There are also many non-profit organizations such as Coffee-Kids that help the communities of coffee farmers through humanitarian projects. They are often funded directly by concerned citizens and conscious corporations. There are many roasters that are also actively working to improve the life on coffee farms.

History of the Propagation of the Coffee Plant

Coffee was first discovered in Ethiopia around 575 AD. According to one of many legends, a goatherder by the name of Kaldi found his goats to be very energetic and frisky after eating the berries. Kaldi tried some himself and was delighted with the effect. Once a Moslem monk saw Kaldi and his goats jumping and being very playful. Kaldi told the monk about his discovery. The monk would get very sleepy while doing his late night prayers so he tried Kaldi's berries and was astonished by the results. He dried and boiled the fruit and all the monks used the drink to stay awake during late night prayers. Thus the coffee drink came into being.

Though coffee was cultivated as early as the sixth century A.D. in Yemen, it did not gain popularity until the 15th and 16th Centuries when it was cultivated extensively in Yemen, district of Arabia.

The Arabians jealously guarded their coffee plants by making sure that no coffee beans were taken out of Arabia without first being roasted or boiled to destroy its germination power.

In the 1600s, Baba Budan, a Moslem pilgrim from India, smuggled some fertile seeds from Mecca and planted them in the mountains of Mysore in India. In 1699 a Dutchman named Henricus imported seeds to Java from India. This started coffee production in the Dutch Colonies. From here coffee seeds and plants were sent to the botanical conservatory in Amsterdam. These seeds were cultivated at the conservatory and were propagated and sent to many conservatories throughout Europe. Thus the Dutch took the lead in propagating coffee in their colonies of Java, Sumatra, and Bali.

The French wanted to cultivate coffee in their colonies, but their efforts to transplant plants from Amsterdam were not successful. Finally in 1714 Amsterdam sent a five-foot tree to Louis XIV of France. This tree was successfully planted and propagated in the botanical conservatory of Paris.

In 1723, a French captain, Gabriel Mathieu de Clieu, of French Martinique Island brought a coffee plant from Paris to Martinique. He encountered many difficulties during this historic voyage, but kept the coffee plant alive by sharing his own ration of drinking water and looking after it day and night. In 1727, an earthquake in Martinique destroyed most of the island’s cocoa plantations and the island was subsequently replanted with coffee. By 1777, Martinique had about 19 million coffee trees. Coffee was also cultivated in French Guiana and many other nearby islands. Coffee trees from Martinique were introduced to Haiti where they replaced less hardy plants introduced by the French in 1715.

The first coffee in Brazil was planted in 1727 from plants brought from French Guiana. However, significant coffee production in Brazil started after 1760 when Jo’o Alberto Castello Branco brought plants from Portuguese Goa in India to Rio de Janeiro.

Coffee was introduced to Costa Rica from Cuba by Don Francisco Xavier Navarro in 1779. The English brought coffee to Jamaica in 1730.

Coffee was introduced to Guatemala in the 1750s. However, at that time Guatemala’s main export was Cochineal (worms used for natural food coloring) and Indigo (a natural dye), so coffee did not take a hold. It was only in the 1850s, when these industries collapsed that farmers started growing coffee in large quantities.

Coffee did not become a major crop in India until the British started emphasizing its production in the 1840s. However, it is said that the coffee seeds that Baba Budan brought from Yemen to India in the 1600s are responsible for the propagation of coffee throughout the world.

Coffee trees grow in tropical regions. The beans grow in pairs of seeds in cherries. The seeds are removed from the cherries and are dried and hulled to remove the protective skin called parchment. The coffee beans are greenish in color and are subsequently roasted to various shades of brown depending on the roast style. The roasted beans are ground and brewed with hot water to make the coffee drink.
